Gluten free, refined sugar free, dairy free chocolate chunk cookies

Ok, I get it, we are on whatever day of quarantine and its been REALLY hard for me to not want to stay inside all day and make yummy baked goods. But the other night Trev was sick and I was dying for a cookies so I whipped up a batch, posted It on instagram and SO many of you wanted to deets! So here we are! DISCLAIMER: usually, when I bake or cook anything for that matter, I tend to be “throw some in there throw some in here” and nothing it super set in place. Take that s you will, and have FUN!

DRY STUFF

1 cup of blanched almond flower

1/3 cup of coconut flower or any gluten free flower you’d like (You do NOT have to use two different flowers, I just like the consistency it gives!)

1/3 cup of buckwheat (or oats, this is also not something you do, again I just love the consistancy)

2 tablespoons of coconut sugar (this is totally up to you, I like the caramel flavor it gives but you could totally do honey or just keep the maple syrup)

1 dash of salt (I like my cookies heavy on the salty sweet side)

1 dash of cinnamon

1/8 teaspoon of baking soda (really I just think of this as a “smaller dash”)

WET STUFF

1/2 cup of maple syrup

1 dash of vanilla (ha..see…)

1 egg

1 tablespoon of coconut oil

1 handful of roughly chopped dairy free chocolate (or chocolate chips)!

This might be a bit stickier than a regular cookie mix and that’s ok! If it freaks you our, you can totally add some almond flower to get your desired texture. Once your mix is…well… mixed.. go ahead and get to rollin! you want these babies in a ball, and once placed on the pan, go ahead and push them down a bit, they don’t spread as much as regular cookies do so make sure to shape them to the desired shape. Pop those in the oven and cook for, maybe 10 minuets? I like to cook them until the outside rim is golden brown and the center is still a bit light, this makes for a super gooey cookie. So delish!
